I am not a pepper sauce connoisseur or even a collector. With the extracts available today I am not interested in heat. A little extract placed into any sauce will give it whatever level of heat you prefer.

For the longest time I preferred more of a Mexican style sauce but in the last year or so I have had more of a taste for a Louisiana style sauce.
